Pesto Pasta
Pesto is one of those things I always have in the fridge however if I’m being completely honest 9 times out of 10 it was from the supermarket. I decided to make it from scratch a couple of weeks ago and let’s just say I’m done buying pesto. It takes only a few minutes to make, can be stored in the fridge for a few days and goes perfectly with some pasta!

Pesto Sauce
  1. Wash and take the stems off of the fresh basil leaves.
  2. Combine basil leaves, pine nuts and garlic in a food processor and blend until fine.
  3. With the machine running slowly dribble in the oil and process until the mixture is smooth.
  4. Add the cheese and process very briefly, just long enough to combine. Store in refrigerator or freezer.
Pasta
  1. Boil pasta of your choice for approximately 12mins with a pinch of salt. Once cooked, drain using a colander and pour cool tap water to prevent pasta from sticking.
  2. Place pasta back into pot and spoon 3-4 tablespoons of pesto sauce and gently combine over low heat.
  3. Serve and top with a sprinkle of grated parmesan cheese.
