French Toast Roll Ups
Not only are French Toast Roll Ups quick, easy and delicious but they are a lot more fun to make than regular French toast. They are also a great way to use any fruit that is getting a bit too soft to eat on its own.

Instructions
  1. Cut the crust off the all slices of bread, flattening the individual slices with rolling pin.
  2. Spread your desired filling (cream cheese/nutella/jam) across each of the slices of bread. Then place your preferred fruit (blueberries work well for this), along one end of the bread and roll tightly inward. Repeat this with all slices of bread.
  3. Using a shallow bowl, lightly beat the eggs, milk and vanilla essence together.
  4. Coat roll ups well in egg mixture. Light the gas and place butter into a non-stick frying place. Once the butter has melted, gently place the roll ups and fry, turning them over to ensure an even golden colour.
  5. When the French Toast Roll Ups look perfectly golden, place in a bowl and dust with icing sugar and leftover berries, yogurt and honey/maple syrup.
  6. Alternatively you can finish the roll ups with chocolate sauce.
